Shweet!

I'm feeling MUCH better. Even worked most of the day at the warehouse and thrift store, and I've been cooking this evening for a church picnic tomorrow.

But before talking about today, I think I'll back up a bit, since I've been derailed for a little while with the crud.

I must tell you about the sweet potatoes in this picture.


I grew up in New England and I'm pretty sure I didn't have a sweet potato until I was married. I rarely cook with them - sweet potato fries occasionally, but mainly I eat other people's recipes.

But while I was at my mom's last week, a sweet potato recipe in a magazine caught my attention. It was probably the mention of aged white cheddar. And apples. And whipping cream. And orange juice. And a spanish onion. And brown sugar. And butter. So I tried it, and WOW.

The sweet potatoes are baked and then peeled and mashed with shredded white cheddar, orange juice, whipping cream and salt. Then they're baked. They're served with an unusual concoction of butter, brown sugar, spanish onion and apple wedges, and black pepper, microwaved until tender.

It may sound odd, but it's an amazing combination!

We had sweet potatoes in Illinois/Indiana, but as a child I took a spanking rather than taste one, so I didn't taste sweet potato casserole until in my mid-30's - just out of the principle of hte thing! LOL That's good with cinnamon and marshmallows, and I have a sneaking suspicion what you make would be mouth-watering too!
